Chef’s Knife? More Like Chef’s Life

I am going to stray away from the normal recipe article this week to talk about something that is vitally important for every kitchen, and that is knife care. In a commercial kitchen, a knife is referred to as a “sharp” and it is a common call-out to fellow co-workers when moving through the kitchen with a sharp in hand. A knife is a chef’s livelihood, and from very early on in training chefs are graded on their knife cuts.

As days pass, we can complain about time flying or rejoice in our blessings. I never thought much about retirement when I was younger, but as the saying goes, it’s never too late to be what you might have been. Had anyone told me I’d teach in public schools later in life, I would have been surprised. Now, as a teacher, I can honestly say it’s the most exciting and satisfying profession I could have imagined.
