New Valley business owners look to become part of community

Berthoud, Colorado natives Kristin and Faren Stroh have recently purchased Lollypop's Ice Cream Shop located at 107 E. Bridge Ave. in Saratoga. After getting married on July 4 2020, the couple eventually found themselves in Kansas.

On previous visits to the Platte Valley, Kristin Stroh had submitted applications to local businesses. David and Amanda Scott, owners of Platte Valley Dental, having an opening for a dental assistant, reached out to Kristin with the job opportunity. With no luck buying a house in Kansas, the couple began to think of other options. With a background as an oral surgery assistant, Kristin began working at Platte Valley Dental in 2021.

While job hunting for Faren, the couple found themselves at the Saratoga/Platte Valley Chamber of commerce. While house hunting, they heard of a business for sale with an apartment above it. After a quick drive by "we just fell in love with the building right away".

"It's so peaceful and beautiful here" continued Kristin.

Having a similar job at the age of 14 in Berthoud Colorado serving coffee and doughnuts to farmers, she was very open to the idea of serving coffee and ice cream. While also co-owning Lollypop's, Faren Stroh will be the new Planning and Zoning officer for Saratoga.

"Today I get to serve happiness" is soon to be the motto of Lollypop's Ice Cream Shop. Owners Kristin and Faren are striving to make Lollypop's a welcoming and peaceful environment for all, opening their business to foster a pleasant first job experience for teens. Understanding teens do not have the job experience many adults do there's a need for patience.

"We want to have high staff morale and have our staff feel like family" they said.

As seen at Steinley Cup last weekend, the Strohs are even willing to allow their young employees to experiment with new flavors and combinations. They are also committed to bringing comfort and quality to every aspect of their business.

"We've had a huge response as far as positivity and community support."

The Strohs are planning to be very involved in the community, as well as making a family atmosphere in and around Lollipops.

Multiple plans for the future of Lollypop's include new furniture, a jukebox and breakfast. This is just the beginning of what's in store for the business and new owners.

Kristin excitedly explained she hopes to work with the American Legion in hosting summer movie nights and adding heaters to the patio in winter when the ice skating rink is set up. There is even the possibility of hosting birthday parties and other similar events. Kristin and Faren are excited to become part of the Valley. The two had a small opening August 12 "just to be able to see children smile getting their ice cream," explained Kristin.
